Not-So-Chunky Monkey Granola
No added sweeteners or fats (chocolate chips obviously don’t count…). Amounts are approximate because I kinda just threw everything in there.
Blend 1 banana, 1 egg white, 1/4 c peanut butter; pour over 2 c oats, 1 tsp baking powder, 3 tbsp coconut flakes, 1/3 c almonds, 1/4 c sunflower seeds, 1/3 c pepitas, 3 tbsp wheat germ, 3 tbsp ground flax, 2 tbsp chia seed; bake ~20mins 375°; mix in dried cranberries and chocolate chips
